A yummy brekky instead of your morning smoke

Research shows that having a cigarette as soon as you wake means you’re more likely to get cancer. Try and delay that first cigarette of the day by making something delicious for breakfast.

How about this delicious egg and avocado toasted sandwich? With THIS to look forward to, why would you need a cigarette in the morning??

Here is the recipe if you want to give it a go. Put down that cigarette and pick up the frying pan!

Ingredients

  • 2 slices wholemeal bread, toasted
  • pinch salt
  • ground black pepper
  • 1 large egg
  • 4 slices tomato (if you don’t like tomato – leave this out!)
  • 1/2 avocado sliced

Directions

Fry the egg in a frying pan, using a tiny bit of oil so it doesn’t stick. You can fry the egg  ‘sunny-side-up’ (which means you don’t flip the egg) or ‘easy over’ (which means you flip it so that both sides get fried). Fry it until the egg white is cooked and not runny anymore. The egg yolk (the yellow bit) can be runny or hard, depending how you like it.

Spread the avocado on one piece of toast, and top it with the fried egg. Then sprinkle over a pinch of salt and grind some black pepper.

Put the tomato on top of the egg, and then put the second slice of toast on to make the sandwich.

Now get eating!
